Light Summer Meals

No one wants to spend hours in the kitchen on a hot summer day. So here are a few tips for eating well with little sweat. 


  • breaded and fried veggies (use coconut oil and homemade bread crumbs) dipped in marinara
  • cheese, crackers, and grapes
  • stuffed peppers (we use homemade spaghetti sauce and fried burger topped off with whole wheat macaroni, you can put raw burger in the crock pot in the morning and separate with a fork as it cooks)
  • spaghetti squash with your favorite spaghetti sauce
  • mix shredded chicken and any combination of green veggies, with a white sauce
  • use your panini press: use all manner of combinations of meats and cheeses (roasted red peppers and pickles are great pressed in a sandwich with ham and cheese, too)
  • make a fruit salad with any combination of fruits
  • smoothies-ice cold are great for breakfasts
  • pull out the bread dough, top it with different types of cheeses and bake, serve with pizza sauce
  • use your grill and crock pot for all manner of meals to save your oven working over time
  • make extra meat on the grill, slice and refrigerate, throw on salads for lunch the next day
  • try different kinds of homemade salsas with local produce and serve with baked chips
  • make a large batch of humus and serve with cucumbers and carrots
  • warmed dips are wonderful for pretzels, baked chips, and vegetables
