Homeschooling and Warm, Quick Breakfast Ideas


A warm, quick breakfast is sometimes just what we need to  start a great homeschool day. I believe in a good breakfast with plenty of protein and for it to be warm if at all possible. But I've also found that the kids need to eat and get started with the day or we can really get behind and overwhelmed.
So here are some quick ideas for you that follow my healthy requirements and are warm. They all serve 3-4 hungry little ones and one Momma. To make a complete protein, I serve them with milk (any kind you wish is fine).

Pancakes and Waffles
On Saturdays, we have either pancakes or waffles. I make a double batch and then freeze the extras. Then I put them in the toaster oven and serve with fresh fruit and something sweet (maple syrup or honey) during the week.
Little Homeschool Blessing's Homemade Waffles
2 eggs, 1 1/4 c. milk, 2 T. shortening, 1 t. vanilla, 2 c. flour, 1 T. sugar, 4 t. baking powder, and 1/4 t. salt
Mix well and pour into waffle iron and cook until lightly browned.

Couscous
Strange sounding for breakfast, but delicious with sunflower seeds and made according to the directions on the package.

Muffins
These take a little longer than some of the recipes put are absolutely delicious. You could make the batter the night before, store in muffin tins, and then put them in the oven in the morning.
Bethany's Apple Muffin's (or another fruit)
1 c. wheat flour, 1 c. flour, 1 t. baking powder, 1 t. baking soda, 1/4 t. salt, 1 T. Cinnamon, 1/2 c. unsalted butter, 1/2 c. sugar, 1/2 c. brown sugar, 1 egg, 1 c. yogurt, 1 apple (diced thin)
Cream butter, sugar, and brown sugar. Add egg, Mix in yogurt. Add dry ingredients. Fold in fruit. Bake 450 for 10 minutes and then 400 for 5 minutes.

Breakfast Cookies
Everyone always asks me how these taste.  Well...they taste like breakfast. They are great to bake ahead and take out on field trip days!
Out-And-About Breakfast Cookies
1 1/2 c. wheat flour, 1 c. flour, 1/2 c. wheat germ or ground flax, 1/2 c. brown sugar, 3/4 c. yogurt, 1/4 c. oil, 1 egg, 1/2 t. salt, 1/2 t. baking soda, 2 t. vanilla, 1c. raisons or other dried fruit
Mix yogurt, egg, oil, and vanilla. Add dry ingredients. Fold in fruit. Bake 375 for 10 minutes.

Oatmeal
We simply put enough oats in a bowl to fill our bellies. Pour bowling water over. Then we add a sweetener (honey, brown sugar, what-have-you), a sprinkle of cinnamon, and fruits. Strawberries, apples, and blueberries are all hits at our house.

Cream of Wheat
Follow the basic directions on the box and add raisons and brown sugar to taste.

Oat Bran and Raisons
Jo-Jo's Oat Bran
Slowly stir in 1 1/4c. oat bran into 5 c. boiling water. Stir continuously with a wire whisk for 5 minutes. Add brown sugar and raisons (or other dried fruit). Let stand for 5 minutes.

Rice Pudding
This one is really sweet and sugary. I only use it when there is a bunch of extra rice from the night before.
Old Fashioned Rice Pudding from Little Homeschool Blessings
1 1/2 c cooked rice, 2 c. milk, 1/3 c. sugar, 1/4t. salt, 1 t. cinnamon, 1 1/2 c. water, 1 beaten egg, 2/3 c. raisons, 1 T. butter, 1/2 t. vanilla
Mix rice and 1 1/2c. milk, sugar, and salt. Cook over medium until thick and creamy about 20 minutes. Stir in remaining milk, egg and raisons. Cook 5 minutes and add butter and vanilla.

Eggs and Biscuits
Scrambled eggs are quick. I usually make an egg and a half for everyone and mix in about 1/2 c. of milk and then fry.
Ceesa's Favorite Biscuits
1 1/4 c. flour, 1 1/2 t. baking powder, 1/2 t. salt, 1/8 t. cream of tartar, 1/2 T. sugar, 1/4 shortening, 1/4 c. dry milk, 1/2 c. milk
Cut shortening into flour, baking powder, salt, cream of tartar, and sugar. Add dry milk and regualr milk. Bake 450 for 7-9 minutes

I love making breakfast ahead of time. Sometimes I will make a HUGE batch of breakfast casserole (scrambled eggs, sausage or bacon, hashbrowns, etc) and we will eat on it all week. Sometimes with buscuits and sometimes in a burrito and other times just in a bowl with a little cheese and salsa on top. It is a great warm breakfast. Thanks for sharing the recipe ideas!!
